The Givry Premier Cru Servoisine is a biodynamic red wine made from 35-year-old Pinot Noir vines planted in clay-limestone soils. Meticulously managed, the vineyard undergoes severe debudding, green harvesting, and hand-picked triage, with a focus on maintaining acidity over ripeness. Vinification includes 100% destemming, wild yeast fermentation, and a 15-day cuvaison in stainless steel tanks with two daily punch-downs. The wine is aged for one year in 70% new oak and 30% one-year-old barrels, resulting in a refined and expressive expression of the Givry 1er Cru terroir.

Now led by second-generation winemaker Juliette Joblot, the estate sustainably farms 13.5 hectares, including nine hectares of premier cru vineyards, such as Clos de la Servoisine and Clos du Cellier aux Moines.

    Juliette prioritizes acidity over sugar when determining harvest times and enforces strict vineyard selection, sometimes discarding up to 40% of a vintage to maintain quality. The wines, crafted through natural fermentation and careful vinification practices, reflect the unique rocky limestone soils of Givry's natural amphitheater. The reds are plush, spicy, and balanced, while the whites are both dense and lively. While approachable upon release, Joblot wines are known for their ability to age gracefully for up to 25 years in strong vintages.
